The AMS is the leading American professional organization devoted to mathematics at the graduate and research level.  Browse throughout this site, especially Employment and Careers and What's New in Mathematics.
GRE OnLine
The Graduate Record Examination, sponsored by the Educational Testing Service, offers a growing list of services to propsective graduate students.  Included in this in-depth site are the General Test Description and the Mathematics Subject Test Description.
Young Mathematicians' Network
A wealth of information on academic mathematical life, albeit mostly after graduate school.
